Stinkfest Queens and Ecotrust Present the Annual 2026 Portland Fermentation Festival!

Join us for Portland’s annual celebration of all things fermented, presented by Stinkfest Queens and Ecotrust. Come taste, share, learn, and geek out over fermented food and drink with fellow fermentation enthusiasts of all ages.

Come taste, share, learn, and celebrate all things fermented!

Whether you’re a longtime home fermenter, fermentation-curious, or simply love pickles, cheese, kimchi, kombucha, miso, cider, and sourdough, there will be plenty to taste and explore.

Meet fellow fermenters, swap cultures and recipes, learn from local fermentation enthusiasts, attend live demonstrations, and sample an incredible variety of fermented foods and drinks made by both professionals and passionate home fermenters.

New this year: BYOF — Bring Your Own Ferment!

Have a ferment you’re proud of? Bring it!

Our new BYOF station will be located just outside the demo room and is open to home fermenters of all experience levels. Bring a jar, bottle, or small container of your homemade small-batch food or drink ferment to sample and share with other festival-goers.

Sour pickles? Bring them.
Miso? Absolutely.
Fizzy water kefir? Yes, please.

We also encourage you to bring copies of your recipe and share your fermentation tips, discoveries, mistakes, and lessons learned. Amateur to advanced home fermenters unite!

Festival favorites are back

Starter Barter & Adoption Center
Bring a fermentation starter and take one home! Share and adopt vinegar mothers, kombucha SCOBYs, sourdough starters, and more.

Bacterial Petting Zoo
Get up close and personal with SCOBYs, cultures, fermentation mothers, and other fascinating microorganisms that make fermented foods possible.

Fermentation Demonstrations
Learn techniques, ask questions, and pick up new ideas from experienced fermenters.

Lots to Taste
Sample everything from kimchi, miso, natto, cheese, and long-fermented breads to hard cider, kombucha, and much more.

A Portland fermentation tradition

The Portland Fermentation Festival was one of the first fermentation festivals of its kind in the United States and has helped inspire fermentation celebrations far beyond Portland, including Tokyo’s annual Fermentation Future Forum, launched in 2017.

Come celebrate the microbes, makers, traditions, experiments, and delicious flavors that make fermentation so much fun.

Bring your curiosity. Bring your appetite. And if you make something fermented, bring a little of that too!
